A proper vegan diet requires nutrients found in very specific plants and legumes not found in the Old West. And it's not like you can just ship the stuff around, this is the late 1800s, there is no such thing as planes and cold storage consists of a very large block of ice. He'd die of malnutrition within a year.

@6:08 PM Anon--Only thing lacking would be B12, and there would probably be enough B12 just laying all over the place in Old Westy times. A person doesn't need much and it would be in the food crops unlike on a modern farm.
Perhaps he would die of malnutrition within a year. Then again, we're talking about Old West. He could've gone out with a bang, preferring to die in a gunfight against incredible odds rather than die of malnutrition or forget his diet and eat some good old meat. That would be so awesome.

@1:15 AM Anon: Ummm, plants are an awful source of B12 since much of it is in an inactive form in plants so he likely would be deficient. I have no idea why you think crops back then would be better for it. He would also probably have low calcium, low iodine and maybe an iron deficiency. Most of this stuff can be counteracted with proper diet but people didn't exactly have access to whatever food they wanted back then.
